Lean Green Protein Pancakes

Happy (workout) Wednesday!

Pretty soon into my freshman year of college, I realized that if I ate something very high in carbs and low in protein (Cinnamon Toast Crunch – all day every day, y’all), I would CRASH around 10am. I needed something with a little more substance to tie me over (and keep me awake in those lectures!) until I had a break for lunch. Eggs became my go-to and still are on some days. But I have the biggest sweet tooth (in fact, I don’t have just one, all of my teeth are sweet teeth) so I need an option for when I’m craving something sweet in the morning. Let me introduce you to my lean green protein pancakes. Don’t worry, they’re only green because of the type of protein powder I use.

These pancakes are high in protein and low in carbs, sugar, and fat.  I added blueberries, raspberries, and organic pure maple syrup for an extra treat, but the pancakes are delish on their own.  Xo, AL

Ingredients:

1/2 banana mashed (mash it before mixing with everything else!)

1 scoop VegaOne vanilla protein powder

1/4 tsp vanilla extract

1/4 tsp cinnamon

1 TBSP Chia Seeds (Optional)

2 TBSP Vanilla Almond Milk (Unsweetened)

1/4 cup egg whites

Directions:

  1. Mash Banana
  2. Mix everything else
  3. Mix banana in with everything else (I used my NutriBullet)
  4. Spray skillet (on medium heat) with nonstick spray
  5. Pour batter and wait for it to start bubbling
  6. Carefully flip
  7. Wait for the other side to brown (a minute or two)
  8. Enjoy!
